Mom Recipe: Meatball Nirvana

Easy to prepare meal with a little pre-planning, Meatball Nirvana, is one of our favorites. I like to make the meatballs ahead of time and freeze in a freezer bag. After defrosting they cook in the oven quickly while you're making the sauce and boiling the noodles. A quick loaf of Italian bread and dinner is served.
For a quick and tasty red sauce I use a 28 ounce can of crushed
tomatoes, a can of tomato paste, minced garlic, basil, salt and pepper
to taste, water to thin to your desired thickness. For an extra yummy
sauce that has a richer flavor I like to add 1/2 cup to 1 cup of red
wine instead of water. After the meatballs are almost cooked through I
add them to the sauce and simmer until cooked through and until the
alcohol has cooked off. Red wine really makes a difference.
